Control opening and service hours of the Service Buffet Line and the Galley operation. Take control of the galley activities when the Executive Sous Chef is off.

Be a Leader Run a main section independently, under minimum supervision. In-depth knowledge of all sections within the hot and cold kitchen is a must. A CDP must display strong leadership skills and the ability to train and coach others. The CDP position is the link between the galley management and all other lower positions in a galley operation.
